Vegetarian recipes

These vegetarian recipes contain no meat or fish in any ingredient you need to cook them, and that includes the easy-to-miss ones, from meat stock and fish sauce to hard cheeses made with animal rennet. The whole ingredient list is checked, not just the main one, so the tag means the same thing on every recipe.

What remains is a full week of cooking, not a page of side dishes. Start the day with shakshuka, take spanakopita or tortilla española for lunch, and make margherita pizza or aloo gobi for dinner. Set the number of people and every amount adjusts to match.

What counts as vegetarian on this page

A recipe is tagged vegetarian only when every ingredient that is not optional is free of meat and fish. That rules out the obvious and the hidden alike: chicken or meat stock, fish sauce, anchovies, gelatine, and standard dashi, which is made with bonito flakes.

Cheese is where most people get caught out. The traditional Italian hard cheeses are set with animal rennet, so a recipe that needs Parmesan, Grana Padano or pecorino is not tagged vegetarian here, however meat-free it looks.

Optional ingredients do not count against a recipe. Arroz e feijão lists smoked bacon as an extra, because some Brazilian cooks fry it with the onion, but the rice and beans are complete without it.

Eggs, beans and cheese: what anchors a vegetarian meal

Without meat in the middle of the plate, something else has to hold a meal together. Eggs do it in shakshuka, where they poach in a spiced tomato and pepper sauce, and in tortilla española, set around potatoes cooked slowly in olive oil. Egg fried rice needs little more than cold rice, eggs and a very hot wok.

Beans and pulses do it in chickpea stew, Cuban black beans, fava from Santorini and akara, the Nigerian black-eyed bean fritters. Cheese does it in spanakopita, baked feta pasta and cauliflower cheese, where a mustard-sharpened cheddar sauce blisters brown in the oven.

Planning a vegetarian meal from starter to dessert

For a starter, deviled eggs are ready in under half an hour, or set out a bowl of cacık, the Turkish yoghurt and cucumber dish. Briam, the Greek tray of courgette, aubergine, potato and tomato baked slowly in olive oil, works as a main course with focaccia beside it, and margherita pizza needs nothing more than a caprese salad next to it.

Dessert is the easy part, because custards, crumbles and cakes rarely need anything beyond eggs, dairy, flour, sugar and fruit. Apple crumble, crème brûlée, flan, banoffee pie and brownies are all here. Once you have chosen, the ingredients you still need go onto a shared shopping list in one tap, grouped by aisle.

Frequently asked questions

Is Parmesan vegetarian?
No. Parmigiano Reggiano is made with rennet from calves, and Grana Padano and pecorino are also made with animal rennet, which is why recipes that need them are not tagged vegetarian here. Other cheeses, such as the feta in spanakopita or the cheddar in cauliflower cheese, are made both with animal rennet and without it, so if that matters to you, look for a vegetarian mark on the label when you buy them.
Do vegetarians eat eggs?
Most do, though some, particularly in India, do not. A vegetarian diet leaves out meat and fish but usually keeps eggs, milk, butter and cheese, and that is how the tag works here, so shakshuka, tortilla española and crème brûlée all carry it. If you avoid eggs and dairy as well, the vegan recipes are the ones to look at.
Is Worcestershire sauce vegetarian?
Standard Worcestershire sauce is not, because anchovies are one of its ingredients, so a recipe that needs it is not tagged vegetarian here. Vegetarian versions are sold, and the bottles look much the same, so read the label before you buy. Fish sauce and oyster sauce are made from seafood too, so check for them when you adapt a stir-fry or curry.
What is an easy vegetarian dinner?
Shakshuka is one of the easiest: eggs poached in a spiced tomato and pepper sauce, cooked and served in one pan in about 35 minutes. Baked feta pasta needs about 45 minutes, most of it in the oven while you do something else. Tortilla española takes about an hour, and what is left over is just as good cold the next day.
