Warm Quinoa Salad

By Groceree

Also known as Roasted Cauliflower Quinoa Salad

An autumn grain salad served warm: cauliflower, red onion and chickpeas roasted with cumin and smoked paprika until browned at the edges, then tossed with just-cooked quinoa that has been tipped over baby spinach so the leaves wilt in its heat. A lemon-tahini dressing, parsley and pomegranate seeds bring sharpness and freshness to the smoky roasted vegetables.

Ingredients

  • quinoa200 g
  • cauliflower1 head
  • red onions2
  • chickpeas240 g
  • olive oil4 tbsp
  • ground cumin2 tsp
  • smoked paprika1 tsp
  • baby spinach100 g
  • flat-leaf parsley1 handful
  • pomegranate seeds100 g
  • tahini4 tbsp
  • lemons1
  • garlic cloves1
  • feta (optional)100 g
  • salt
  • black pepper
  • water500 ml

Instructions

  1. 01

Heat the oven to 220°C, or 200°C fan. Cut the into small florets about 3 cm across. Peel the and cut each one into 8 wedges through the root, so the layers hold together. Drain and rinse the , then pat them dry with kitchen paper. Patted dry, the crisp in the oven; left wet, they steam.

  2. 02

Toss the , and with 3 tbsp of the , the , the , 1 tsp of and plenty of . Spread them out in a single layer over 2 large baking trays, leaving space between the pieces.

  3. 03

Roast for 25 to 30 minutes, turning the vegetables and swapping the trays over halfway through, until the is tender and browned at the edges, the are soft and the are crisp.

  4. 04

Meanwhile, rinse the in a sieve under the cold tap for 30 seconds to wash off its bitter coating. Put it in a medium saucepan with 450 ml of the and half a teaspoon of , and bring to the boil.

  5. 05

Cover, turn the heat down to low and simmer for 15 minutes, until the is absorbed and each grain shows a little white tail. Take the pan off the heat and leave it covered for 5 minutes, then fluff the with a fork and put the lid back on to keep it hot.

  6. 06

While the cooks, make the dressing. Squeeze the and finely grate the . Whisk the with the juice, the , the remaining 1 tbsp of and a pinch of . It will seize into a thick, grainy paste at first; whisk in the remaining 50 ml of a spoonful at a time until it turns smooth and pale and pours like double cream.

  7. 07

Roughly chop the . Put the in a large, wide serving bowl and tip the hot over it. Leave it for 2 minutes so the heat wilts the leaves, then toss them together.

  8. 08

Add the , and to the bowl with half the and half the dressing, and toss gently. Taste, and season with and .

  9. 09

Scatter over the and the rest of the , and crumble the over the top, if using. Drizzle with the rest of the dressing and serve warm.

Notes

  • Give the vegetables room on the trays. Crowded together they steam rather than brown, and the browned edges carry most of the flavour.
  • Half a large pomegranate gives about 100 g of seeds. Halve it across, hold one half cut side down over a bowl and tap the skin firmly with a wooden spoon so the seeds drop out, then pick out any white pith.
  • It keeps for up to 4 days in the fridge, which makes it a good packed lunch. Keep the pomegranate seeds and the rest of the dressing separate and add them after warming the salad through.
