One-Pot Chicken Orzo
By Groceree
Also known as Lemon Chicken Orzo
Boneless chicken thighs browned in a deep pan, then returned to it to finish cooking in orzo that has been toasted in the pan and simmered in hot stock with lemon zest until its starch turns the liquid creamy. Lemon juice, baby spinach, Parmesan and dill go in at the end, and the whole dish is cooked in a single pan.

Ingredients
boneless, skinless chicken thighs700 g
dried oregano1 tsp
olive oil2 tbsp
onions1
garlic cloves3
orzo300 g
chicken stock1 l
lemons1
baby spinach100 g
Parmesan50 g
dill3 tbsp
salt
black pepper
Instructions
- 01
Heat the in the microwave, or make it up with just-boiled water from the kettle, so it goes into the pan hot. Finely chop the and , grate the zest from the and squeeze its juice, finely grate the and chop the .
- 02
Pat the dry with kitchen paper and season them all over with the , and .
- 03
Heat the over a medium-high heat in a deep frying pan or sauté pan with a lid, about 30 cm across. Lay in the smooth side down in a single layer, in two batches if it will not fit, and fry without moving it for 5 minutes, until deep golden. Turn and brown the other side for 3 minutes, then lift it onto a plate; it finishes cooking later.
- 04
Turn the heat down to medium. Add the to the fat left in the pan and cook for 5 minutes, scraping up the browned bits, until soft and translucent. Stir in the and cook for 1 minute.
- 05
Add the and stir it around in the fat for 2 minutes, until it smells toasty and some grains turn golden.
- 06
Pour in 900 ml of the hot , add the zest and season lightly with , as is often salty already. Bring to the boil, stirring and scraping the bottom of the pan so no orzo sticks.
- 07
Nestle the back into the with any juices from the plate. Cover, turn the heat down to low and simmer for 10 minutes, stirring every few minutes and scraping the bottom so the does not catch.
- 08
Uncover and simmer for 3 to 5 minutes more, stirring often, until the is tender and the liquid has thickened into a loose, creamy sauce; add the remaining if it thickens before the is cooked. The is done when the thickest shows no pink when cut, or reads 75°C on a probe thermometer.
- 09
Take the pan off the heat. Stir the into the around the , a handful at a time, until it wilts, then stir in the juice, most of the and most of the .
- 10
Taste and season with and . Scatter over the rest of the and and serve straight from the pan.
Notes
- Let the chicken colour deeply before turning it. The browned bits it leaves in the pan dissolve into the stock and flavour the orzo.
- Toast the orzo in the fat until it smells nutty. Toasted grains taste deeper and hold their shape instead of turning mushy.
- It keeps thickening as it stands, so take it off the heat while it is still loose. Leftovers keep for 3 days in the fridge; loosen them with a splash of water or stock as they reheat.
