Instructions
Dough
- 01
Take the 80 g of for the and the 100 g for the out of the fridge to soften. Warm the until lukewarm and dissolve the in it (with instant dried , use 8 g instead of 25 g fresh). Add the , , , and and mix to a .
- 02
Knead for 10 minutes, adding the softened a little at a time, until smooth and elastic.
- 03
Cover and prove for 1 hour until doubled.
Filling
- 04
Beat the softened , the , the and the to a soft paste.
- 05
Roll the into a rectangle about 40 by 50 cm and spread the to the edges.
- 06
Fold the in three like a letter and cut it across into 12 strips.
- 07
Stretch each strip a little and twist it, wind it twice around two fingers, then bring the end over the top and tuck it underneath to make a knot.
Finishing
- 08
Set the buns on lined trays, cover, and prove for 45 minutes until visibly puffy. Heat the oven to 220°C while they prove.
- 09
For the syrup, bring the 2 tbsp and the to the boil in a small pan, stirring until the dissolves, then set aside.
- 10
Beat the , brush it over the buns and scatter with .
- 11
Bake at 220°C for 10 to 12 minutes only. Swedish buns are baked hot and fast and pulled while still pale gold — longer and they dry out.
- 12
Brush with the syrup while hot and cool on a rack.
Notes
- Cardamom in the dough is what makes these Swedish rather than American. Pre-ground cardamom fades fast: use a fresh jar, or better, crush the seeds from cardamom pods yourself.
- The knot is traditional. For plain spirals, roll the filled dough up from a long side instead of folding it and cut it into 12 slices. Roll it snugly but not tightly, or the middles push up as they bake.
- Best the day they are made. They freeze well unbaked after shaping.

- ÆblekageGammeldags æblekage, Denmark's old-fashioned apple cake, is not baked at all: chunky vanilla apple compote is layered cold in a glass bowl with breadcrumbs toasted crisp in butter and sugar, and with softly whipped cream. Dots of redcurrant jelly on top add a sharp finish to the sweet, crunchy and creamy layers.
- OmenapiirakkaThis everyday Finnish apple pie needs no pastry: a thick, buttery batter flavoured with cardamom is spread into a pie tin, covered with overlapping apple slices and sprinkled with cinnamon sugar. In a hot oven the soft cake rises golden around the fruit.
