Ingredients

  • dried white beans500 g
  • onions2
  • carrots3
  • celery sticks3
  • garlic cloves3
  • tinned chopped tomatoes400 g
  • tomato paste1 tbsp
  • olive oil150 ml
  • bay leaves2
  • dried oregano1 tsp
  • flat-leaf parsley1 handful
  • salt
  • black pepper
  • water2 l

Instructions

  1. 01

The night before, cover the with plenty of cold water and leave them to soak for 8 to 12 hours.

  2. 02

Drain the soaked , cover with fresh water and boil hard for 10 minutes, then drain again.

  3. 03

Chop the and , peel the and slice them into rounds, and cut the into 1 cm slices.

  4. 04

Return the to the pot with the , , , and , and the , which should cover them by about 4 cm.

  5. 05

Simmer for 45 to 60 minutes, until the are nearly tender. Do not salt yet — the soup reduces a good deal, so it is seasoned at the end.

  6. 06

Add the , , and half the , and cook for 30 minutes more until the are completely soft and the soup has thickened.

  7. 07

Crush a ladleful of against the side of the pot and stir them back in to thicken it further.

  8. 08

Season now with , and generously with .

  9. 09

Stir in the rest of the off the heat. Chop the and scatter it over.

Notes

  • Salt only once the beans are soft. The soup reduces a lot as it cooks, so salt added at the start is easy to overdo.
  • Half the oil goes in raw at the end. Greek cooking uses olive oil as a finishing ingredient, not only a cooking fat, and the quantity is meant to be startling.
  • Fasolada is better the next day and is traditionally eaten with feta, olives and bread rather than as a starter.
