  • caster sugar2 tbsp
  • baking powder1 tsp
  • bicarbonate of soda½ tsp
  • ground cardamom1 tsp
  • lemons1
  • salt1 pinch
  • butter60 g
  • icing sugar3 tbsp
  • raspberry jam6 tbsp

  2. 02

Separate the . Beat in the egg yolks and to a smooth batter.

  3. 03

Whisk the whites to stiff peaks and fold them in gently. The whites are what make them light and round.

  4. 04

Melt the . Heat the æbleskiver pan over medium heat and put a little melted in each hollow.

  5. 05

Fill each hollow almost to the top with batter.

  6. 06

When the edges set and bubbles form, after about 1 minute, use a knitting needle or skewer to turn each one a quarter turn, so the uncooked batter runs down to form the rest of the ball.

  7. 07

Keep turning every 30 seconds until they are round, golden all over and cooked through.

  8. 08

Dust with and serve hot with for dipping.

Notes

  • Turn them in quarter turns as they set. It is what forms the ball, and it takes a few tries to get the knack.
  • Folding in whisked whites gives the light, airy centre.
  • Æble means apple — they once had apple slices inside, which most Danes now leave out.
