Churros con Chocolate
By Groceree
Also known as Churros
Madrid-style churros: a scalded dough of flour, boiling water, salt and a spoonful of olive oil, piped through a star nozzle and fried until the ridges are crisp. They come with a cup of drinking chocolate thickened with cornflour, closer to a sauce than a drink, for dipping.

Instructions
Churros
- 01
Bring the to a rolling boil with the and the .
- 02
Take the pan off the heat, tip in all the at once and beat hard with a wooden spoon. Within 1 minute it comes together into a smooth heavy ball that leaves the sides of the pan clean.
- 03
Cover the pan and leave the dough for 10 minutes. Piping is much easier once it has stopped steaming, and hot dough goes slack in the bag.
- 04
Heat the frying to 180°C in a deep pan filled no more than a third of the way up.
- 05
Fit a sturdy piping bag with a closed star nozzle at least 1 cm across and fill it with the dough. Pipe lengths of 12 to 15 cm straight into the , cutting each one off with scissors, and fry four at a time.
- 06
Fry for 2 to 3 minutes, turning once, until deep gold and firm to the tongs. Lift onto a rack and roll in the while they are still hot.
Chocolate
- 07
Mix the to a smooth paste with 4 tablespoons of the cold .
- 08
Heat the rest of the with the until it steams, take it off the heat and stir in the chopped until it has melted completely.
- 09
Whisk in the paste and return the pan to a gentle heat for 2 to 3 minutes, stirring, until the thickly coats the back of a spoon. Pour into small cups.
Notes
- The closed star nozzle is what keeps churros from bursting: the grooves let steam escape along the length. Piped through a plain round nozzle, pressure builds inside and they can split open in the oil.
- Hold the oil at 180°C. Below 170 they drink it and come out heavy, above 195 the outside darkens before the middle has set.
- There is no sugar in the dough on purpose. The sugar goes on afterwards and the chocolate carries the rest, which is why these taste less sweet than the cinnamon-sugar kind.
