Grilled Halloumi Salad
By Groceree
Slices of halloumi griddled until they are striped dark brown and soft in the middle, laid over crisp leaves, cucumber, tomato and a lot of mint and parsley. The dressing is sharp and barely salted, because the cheese carries all the salt the plate needs.

Instructions
Dressing
- 01
Crush the , if using. Put the , , , , and in a jar with the smallest pinch of , screw the lid on and shake until the thickens and turns cloudy and pale.
- 02
Taste it on a leaf. It should be noticeably sharper than a you would use on its own, since everything salty on the plate will flatten it out.
Salad
- 03
Thinly slice the and drop it into a bowl of cold water and leave it while you do everything else. 10 minutes takes the harsh raw edge off without losing the crunch. Drain it well before using.
- 04
Halve the lengthways, scrape out the watery seeds with a teaspoon and cut the halves into thick slices on the diagonal. Deseeding is what keeps the plate from going watery.
- 05
Separate the leaves and halve the . Pile the , the , the , the drained and most of the and on a wide platter and toss with about two thirds of the .
- 06
Cut the into 1 cm slices and pat them completely dry on kitchen paper. Wet cheese steams and sticks instead of browning.
- 07
Heat a griddle pan over medium-high heat until a drop of water skitters across it. Brush the with the , lay the slices down and leave them alone for 2 to 3 minutes, until they lift cleanly with dark bar marks underneath. Turn and give them 2 minutes more.
- 08
Lay the hot on top, spoon the rest of the over the cheese while it is still hot enough to drink it in, and scatter over the remaining herbs and the , if using. Serve immediately.
Notes
- Griddle the halloumi last and eat it straight away. As it cools it tightens into something rubbery and squeaky, and no amount of dressing brings it back.
- Halloumi varies a lot in saltiness. If yours is very salty, soak the slices in cold water for 10 minutes and dry them thoroughly before griddling.
- The vegetables can be prepared and the dressing shaken several hours ahead, but keep them apart. Dressed leaves collapse within about 20 minutes.

- Roasted Pumpkin with FetaPumpkin wedges roasted skin-on in a hot oven with olive oil, chilli flakes and thyme until the edges caramelise, then finished while still warm with crumbled feta, a drizzle of honey, toasted pumpkin seeds, mint and lemon.
