Ingredients

  • plain flour250 g
  • dark brown sugar150 g
  • butter150 g
  • ground cinnamon2 tsp
  • ground nutmeg½ tsp
  • ground cloves½ tsp
  • ground ginger½ tsp
  • ground cardamom¼ tsp
  • white pepper1 pinch
  • baking powder½ tsp
  • milk2 tbsp
  • flaked almonds (optional)40 g
  • salt1 pinch

Instructions

  1. 01

Take the out of the fridge about 1 hour ahead. Mix the , , , , and together. Speculaas spice is the whole flavour, so do not be timid with it.

  2. 02

Beat the , softened at room temperature, and the together until combined — not until fluffy, as you want a dense, crisp biscuit.

  3. 03

Mix in all but 1 tbsp of the along with the spices, and , then the , to a firm dough.

  4. 04

Wrap and chill overnight. The rest lets the spices develop and the flavour is noticeably deeper the next day.

  5. 05

Let the dough stand at room temperature for 15 minutes. Heat the oven to 175°C and line two baking trays with baking paper. Roll out the dough to 3 mm thick. Dust the speculaas moulds with the remaining , press the dough in and turn out onto the trays, or cut it into rectangles. Press the , if using, into the tops.

  6. 06

Bake on the trays for 12 to 15 minutes, until the edges darken slightly.

  7. 07

Cool on the tray; they crisp up as they cool.

Notes

  • Rest the dough overnight. The spices bloom in the butter and the difference in flavour is marked.
  • Roll it thin. Speculaas should snap cleanly, and thick ones stay soft in the middle.
  • Speculoos is the Belgian name and the same biscuit — and the spread made from crushed speculoos is a Belgian invention.
