Roasted Beet Salad

By Groceree

Also known as Roasted Beetroot Salad · Beet and Goat Cheese Salad

Whole raw beetroot roasted in foil until sweet and tender, then peeled, cut into wedges and dressed while still warm so it drinks in a sherry vinegar and Dijon vinaigrette. Peppery rocket, soft goat cheese, honey-glazed walnuts and shallot rings mellowed in the vinegar bring creaminess, crunch and a sharp edge to the earthy beetroot.

Ingredients

  • raw beetroot600 g
  • rocket100 g
  • goat cheese150 g
  • walnuts75 g
  • honey1 tbsp
  • shallots2
  • oranges (optional)2
  • sherry vinegar2 tbsp
  • Dijon mustard1 tsp
  • extra virgin olive oil5 tbsp
  • salt
  • black pepper

Instructions

  1. 01

Heat the oven to 200°C. Choose of a similar size so they cook evenly. Scrub the under the cold tap and twist off the leaves, leaving 2 cm of stalk, but keep the skin and the thin root on: unbroken skin holds the colour and juice inside as it roasts.

  2. 02

Rub the with 1 tbsp of the and a little , wrap each one loosely in foil and seal the edges. Set the parcels on a baking tray and roast for 45 to 60 minutes, longer for very large ones, until a thin knife slides through the foil into the centre with no resistance.

  3. 03

Meanwhile, peel the and slice them into thin rings. Put them in a small bowl with the and a pinch of and leave them for at least 15 minutes, stirring now and then. The takes away their harsh raw edge and turns them pink.

  4. 04

Put the in a dry frying pan over a medium heat and toast them for 3 to 4 minutes, shaking the pan often, until they smell nutty and darken a shade. Add the and a pinch of and stir for 1 to 2 minutes, until the foams and clings to every nut; take the pan off the heat before it darkens past amber. Tip the nuts onto baking paper and spread them apart; the coating sets crisp as they cool.

  5. 05

When the is tender, open the parcels and leave it until cool enough to handle, about 15 minutes. Rub off the skins with kitchen paper (gloves keep hands from staining), trim off the stalk and root and cut each into wedges about 2 cm thick.

  6. 06

Lift the out of the with a fork and set them aside. Whisk the into the left in the bowl with a little and , then whisk in the remaining 4 tbsp of until the dressing thickens slightly.

  7. 07

Toss the still-warm with half the dressing in a bowl and leave it for 10 minutes. It soaks up the dressing as it cools, and cool will not wilt the rocket.

  8. 08

If using the , slice off the top and bottom of each, stand it upright and cut away the peel and white pith in strips, following the curve of the fruit. Holding it over a bowl, cut between the membranes to free the segments, then squeeze the juice from the leftover membranes into the remaining dressing.

  9. 09

Toss the with a little of the remaining dressing and spread it over a large platter. Arrange the on top, leaving its pink juices behind in the bowl, then add the segments, if using, and the .

  10. 10

Crumble the over the top straight from the fridge, scatter over the , spoon over the last of the dressing and finish with a grind of . Serve straight away, without tossing, so the does not stain the cheese pink.

Notes

  • Dress the beetroot warm, assemble it cool. Warm beetroot soaks up the vinaigrette, but hot beetroot wilts the rocket and melts the cheese into pink smears.
  • Golden beetroot can join the red. Roast it in its own parcels and dress it in a separate bowl, because red beetroot juice stains everything it touches.
  • The beetroot can be roasted, peeled and dressed up to 3 days ahead. Keep it in the fridge and let it come to room temperature before assembling, so its flavour comes through.
