Baked Feta Pasta
By Groceree
Also known as Feta Pasta · Uunifetapasta
A whole block of feta baked in the middle of a dish of cherry tomatoes and olive oil until the tomatoes burst and the cheese softens, then crushed together into a sauce and tossed through hot pasta. It works because feta will not melt smoothly, so it breaks into a thick, salty, slightly grainy sauce that clings to the pasta.

Ingredients
cherry tomatoes500 g
feta200 g
extra virgin olive oil75 ml
garlic4 clove
dried oregano1 tsp
chilli flakes (optional)½ tsp
black pepper
rigatoni400 g
salt
basil20 g
Instructions
- 01
Heat the oven to 200°C, or 180°C fan. Tip the and the unpeeled cloves, lightly crushed, into a baking dish just big enough to hold them in a crowded single layer, add two thirds of the , the , the and plenty of freshly ground , and toss.
- 02
Push the to the sides and sit the drained block of in the gap. Pour the remaining over the cheese and grind more on top. Add no salt; the brings enough for the whole dish.
- 03
Bake for 35 minutes, until the skins have split and slumped into their own juices and the top of the is soft and browned at the corners.
- 04
About 12 minutes before the dish comes out, cook the in a large pan of well-salted boiling water until 1 minute short of al dente. Scoop out 200 ml of the cooking water before draining.
- 05
Squeeze the soft out of its skins into the dish and discard the skins. Crush the and the together with a fork until they come together into a rough, streaky sauce with pieces of tomato still visible.
- 06
Add the drained pasta and 100 ml of the cooking water and stir hard for 1 minute. The starch in the water pulls the and cheese into a sauce that coats the pasta rather than sitting under it. Add more water a splash at a time if it looks tight.
- 07
Tear in the picked leaves, taste for and serve straight away.
Notes
- Buy feta sold as a block in brine. Pre-crumbled feta is dried out and dusted with starch to stop it clumping, and it stays in separate gritty pieces instead of breaking down into a sauce.
- Cherry or datterini tomatoes are worth the extra over large tomatoes, which hold much more water and give a thin, pale sauce.
- It does not reheat well, as the sauce splits and the pasta softens. If you want to get ahead, bake the tomatoes and feta earlier in the day, leave them in the dish and warm them through while the pasta cooks.
