With floured hands, roll into balls and flatten into discs about 2 cm thick. They should be thick, not thin.

Notes
- As little flour as you can get away with. Syrniki should taste of cheese, not of pancake.
- Thick discs and medium-low heat. Thin ones dry out and hot ones burn before the middle is done.
- Quark or dry curd tvorog. Ricotta is too wet, and cream cheese will not hold together at all.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
