Pumpkin Spice Latte
By Groceree
Also known as Pumpkin Latte
A café-style latte made with real pumpkin: purée, light brown sugar, cinnamon, ginger, nutmeg and cloves are cooked briefly into a syrup, then heated with milk and vanilla, frothed and finished with espresso. The purée gives the milk body and a gentle, earthy sweetness, and the short cooking takes the raw edge off the spices.

Set the pan over a medium heat and stir for 2 to 3 minutes, until the mixture is smooth, glossy and bubbling at the edges and smells of warm spice.
- 03
Take the pan off the heat, stir in the , then whisk in the a little at a time so the mixture stays smooth.
- 04
Return the pan to a medium-low heat and warm the , whisking often, until it steams and small bubbles appear around the edge, about 65°C. Do not let it boil.
- 05
While the heats, brew the as 2 shots of espresso, about 60 ml in all, or as 120 ml of strong in a moka pot or cafetière.
- 06
Take the pan off the heat and froth the with a hand-held frother, a whisk or a stick blender for about 30 seconds, until foamy.
- 07
Pour the pumpkin milk into two large mugs, holding back the foam with a spoon. Pour half of the into each mug, then spoon the foam on top.
- 08
Top with the , if using, and dust with the remaining . Serve straight away.
Notes
- Cook the spices in the syrup before the milk goes in; the heat takes away their raw, dusty taste.
- Keep the milk below a simmer. Boiled, it tastes cooked and its foam collapses.
- For a dairy-free latte, use a barista-style oat milk, which is made to froth.
- Maple syrup can replace the light brown sugar, spoon for spoon, for a rounder, more caramel sweetness.

- Baked Chicken and PotatoesBone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.
- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
