Notes
- Boiling water into the flour is the trick. It partly cooks the starch, so the dough stays soft and forgiving rather than springing back as you roll.
- Cool the filling before it goes in. Warm potato steams the dough and the seal fails.
- Pinch from the centre outwards. Sealing both ends first traps air that bursts the dumpling in the pot.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
