Rice and Peas

By Groceree

The Jamaican Sunday side: rice cooked in coconut milk and the pink liquid left from boiling red kidney beans, scented with thyme, spring onion and allspice (pimento in Jamaica). A whole scotch bonnet sits on top and perfumes the pot without releasing its heat, as long as it comes out unburst. In Jamaica the kidney beans are called peas, hence the name.

Ingredients

  • dried red kidney beans200 g
  • coconut milk400 ml
  • long-grain rice400 g
  • spring onions3
  • garlic3 cloves
  • fresh thyme5 sprigs
  • scotch bonnet chillies1
  • allspice berries6
  • coconut oil (optional)1 tbsp
  • salt1½ tsp
  • black pepper
  • water1.2 l

Instructions

  1. 01

The night before, soak the in plenty of cold water for at least 8 hours.

  2. 02

Drain the soaked , put them in a large heavy pot with the 1.2 litres of fresh cold water and bring to a hard boil for 10 minutes. Then lower the heat and simmer, partly covered, for 45 to 60 minutes until the are tender but still whole. Top up with boiling water if the level drops below the .

  3. 03

Drain the in a sieve over a heatproof jug, keeping all the cooking liquid, and measure it. You want 500 ml of it, deep pink and slightly thickened; make it up with water or boil it down if you have too much. That liquid is what colours the , so do not pour it away.

  4. 04

Return the and their 500 ml of liquid to the pot and add the , the , left whole, the , lightly crushed, the , the , the , if using, the and a few grinds of . Bring to a simmer and taste the liquid: it should be noticeably salty and taste of coconut.

  5. 05

Rinse the in a sieve until the runs clear, then stir it in and level it. Lay the whole on the surface. Handle it by the stalk and do not let a knife or spoon near it: intact it gives a fruity, floral scent, and split it will make the whole pot too hot for most people to eat.

  6. 06

Bring back to a simmer, cover tightly and cook over the lowest heat for 25 minutes. Do not lift the lid or stir; the needs the trapped steam and stirring turns it sticky.

  7. 07

Check that the liquid has gone and the is tender. Lift the out whole, along with the stalks and , then leave the pot covered off the heat for 10 minutes.

  8. 08

Fork the up gently from the edges inwards so the stay whole, and serve.

Notes

  • The beans need soaking overnight, so start the day before. Dried beans and their cooking liquid are the whole point of the dish; two 400 g tins of kidney beans drained, with 500 ml of water, will work in a hurry but the rice comes out pale and tastes flatter.
  • Kidney beans must be boiled hard for a full 10 minutes at the start. Undercooked soaked kidney beans contain a toxin that this initial hard boil destroys, and a slow cooker on its own does not get hot enough.
  • Scotch bonnets vary. If yours has any split or soft patch, leave it out rather than risk it bursting, and serve hot pepper sauce at the table instead. Leftovers keep for 3 days and reheat well covered with a splash of water.
