Ingredients

Dal

  • toor dal or yellow split lentils250 g
  • ground turmeric½ tsp
  • tomatoes1
  • green chillies1
  • salt
  • water1 l
  • coriander1 handful

Tadka

  • ghee3 tbsp
  • cumin seeds1 tsp
  • mustard seeds½ tsp
  • dried red chillies2
  • garlic cloves4
  • asafoetida (optional)1 pinch
  • chilli powder½ tsp

Instructions

Dal

  1. 01

Rinse the two or three times. Chop the and slit the lengthways, then simmer them with the , the and the for 40 to 50 minutes, skimming the foam, until the are completely soft.

  2. 02

Whisk briefly so some break down and thicken the rest. Season with and keep it hot. Roughly chop the .

Tadka

  1. 03

Thinly slice the . Heat the in a small pan until shimmering. Add the and and wait for them to pop — this takes seconds, and burnt seeds make the whole pot bitter.

  2. 04

Add the , the and the , if using, to the pan and fry until the is golden, then take off the heat and stir in the .

  3. 05

Pour the over the dal while it is still crackling, scatter with the and stir through at the table.

Notes

  • The tadka goes on at the end, not into the pot early. The point is spices bloomed in fat hitting the dal hot.
  • Dal thickens as it stands — loosen with hot water when reheating.
  • Asafoetida is a small thing that makes it taste properly Indian rather than just of lentils.
  • For a gluten-free dal, use asafoetida labelled gluten-free (cut with rice flour); most is cut with wheat flour.
