Ingredients
plain flour500 g
dried yeast7 g
caster sugar100 g
water400 ml
salt½ tsp
ground nutmeg½ tsp
vegetable oil1 l
caster sugar (optional)50 g
Instructions
- 01
Warm the until lukewarm (about 37°C, comfortable on a fingertip), then whisk in the and the 100 g of and leave for 5 minutes until it foams.
- 02
Beat in the , and to a thick, sticky batter, much wetter than a dough — closer to a very thick pancake batter.
- 03
Cover and leave somewhere warm for 1 to 2 hours, until the surface is domed and full of bubbles.
- 04
Pour the into a deep, heavy pan to a depth of at least 5 cm, no more than a third full, and heat it to 170°C. Too hot and they brown before the middle cooks.
- 05
Scoop up batter with a wet hand and squeeze a ball out between thumb and forefinger. Shake the drops off your hand first, since they make the spit, and drop each ball in close to the surface of the , letting it roll away from you. A wet spoon is safer and works nearly as well.
- 06
Fry in batches of 8 to 10, for 4 to 5 minutes, turning them as they bob, until deep golden all over, letting the come back to 170°C between batches.
- 07
Drain on kitchen paper and, if you like, roll in the 50 g of while still warm.
Notes
- The batter must be slack. Stiff dough gives dense, bready balls rather than the light stringy crumb that defines puff puff.
- Moderate oil, not hot. At 190°C you get raw centres in a dark shell every time.
- Known by other names across West and Central Africa — bofrot in Ghana, mikate in the Congo — and made much the same way.
