Mujadara

By Groceree

Also known as Mujaddara

Lentils and rice cooked with a great heap of onions fried slowly to a deep, even brown, which is where the flavour of the whole dish comes from. Two thirds of the onions are stirred through with their oil and a third stay crisp on top, with cold yoghurt on the side against the sweetness.

Ingredients

  • onions4
  • olive oil120 ml
  • brown lentils250 g
  • basmati rice200 g
  • ground cumin1½ tsp
  • ground coriander1 tsp
  • ground allspice½ tsp
  • salt1½ tsp
  • black pepper½ tsp
  • water1 l
  • Greek yoghurt250 g
  • flat-leaf parsley (optional)2 tbsp

Instructions

  1. 01

Slice the as evenly as you can. Thick and thin slices in the same pan means some are burnt before the others have coloured.

  2. 02

Heat the in a wide heavy pan over medium heat, add the with a good pinch of and cook them for 25 to 35 minutes, stirring every few minutes. They go limp, then straw-coloured, then a deep even brown. Drop the heat towards the end rather than hurrying: the sugars turn from sweet to bitter very quickly.

  3. 03

Lift about a third of the onto kitchen paper with a slotted spoon and spread them out. They crisp as they cool and become the topping. Leave the rest in the pan with the .

  4. 04

Meanwhile, rinse the under the cold tap until it runs clear, then leave it to soak in cold water.

  5. 05

Bring the to a boil in 700 ml of the and simmer for 15 to 18 minutes, until tender but still holding their shape when you bite one. They cook again with the , so stop while they still have some resistance. Drain them over a bowl and keep the cooking . Drain the .

  6. 06

Add the drained to the in the pan and stir over medium heat for 1 minute, until every grain is coated and glossy. Stir in the , , , the rest of the and the .

  7. 07

Tip in the and 450 ml of the reserved lentil water, topping up with fresh hot water if you are short. Bring to a boil, then cover, turn the heat to its lowest and cook for 15 minutes, until the liquid has been absorbed.

  8. 08

Take the pan off the heat, lay a tea towel under the lid and leave it for 10 minutes before forking the grains through.

  9. 09

Pile onto a platter, heap the crisp over the top and scatter with the , chopped, if using. Serve warm or at room temperature with the alongside.

Notes

  • The onions are not a garnish, they are the seasoning. Taste one before it goes on: sweet and nutty is right, sharp and acrid means they went a minute too far, and there is no rescuing a bitter batch once it is stirred through the rice.
  • Brown or green lentils hold their shape; red ones collapse into purée and are the wrong lentil for this. Cooking the rice in the water the lentils boiled in is what makes the grains taste of lentils rather than sitting next to them.
  • It keeps for 4 days in the fridge and is arguably better on the second day, cold or barely warmed. Leave out the yoghurt for a vegan version and serve it with a chopped tomato and cucumber salad, or a spoonful of tahini loosened with lemon.
