Baked Apples
By Groceree
Also known as Stuffed Baked Apples
Whole Bramley apples, cored, scored around the middle and stuffed with butter, light muscovado sugar, raisins and cinnamon, then baked in a little water until the sharp flesh puffs up soft and fluffy. The butter and sugar that seep out cook down with the water into a syrup to spoon over.

Ingredients
Bramley apples4
butter50 g
light muscovado sugar50 g
raisins50 g
ground cinnamon1 tsp- mixed spice (optional)½ tsp
walnuts (optional)30 g
water100 ml
custard (optional)400 ml
Instructions
- 01
Heat the oven to 180°C. Wash the and core them right through with a corer, keeping them whole, then widen each hole to about 2.5 cm with a small knife so it holds plenty of stuffing.
- 02
With the tip of the knife, score a line through the skin all the way round the middle of each . The flesh swells as it bakes, and the cut lets the skin split neatly instead of bursting.
- 03
Roughly chop the , if using, and cut the into small dice. In a bowl, mix the with the , , and, if using, the and .
- 04
Stand the in an ovenproof dish that holds them snugly, about 20 cm square. Pack the stuffing firmly into the holes, pushing it down with your thumb or the handle of a teaspoon, and pile any extra on top.
- 05
Pour the 100 ml of into the dish around the . It keeps the that runs out from burning and cooks down with it into a syrup.
- 06
Bake for 35 to 45 minutes, spooning the liquid in the dish over the halfway through and adding a splash of water if the dish looks dry. They are ready when a skewer slides into the flesh with no resistance and the flesh has puffed out at the score line, fluffy but not yet collapsing.
- 07
Leave the to stand for 5 minutes, because the stuffing comes out of the oven scalding. Meanwhile, warm the in a small pan, if using.
- 08
Lift each into a bowl, spoon the syrup from the dish over it and serve with the .
Notes
- Bramleys bake to a light, sharp fluff, which is why they are the British choice. Eating apples hold their shape and are sweeter, so use less sugar and expect them to take a little longer.
- Score the skin all the way round. Bramley flesh expands a lot in the oven, and an unscored apple bursts wherever its skin is weakest.
- Apple juice in place of the water gives a fruitier syrup, and demerara in place of the muscovado gives a crunchier top.
- Sultanas work just as well as raisins, and chopped dried apricots or dates make a richer filling.
