Instructions
Dough

Dissolve the in the , add the and mix to a shaggy . Leave it 20 minutes, then add the and knead for 10 minutes until smooth.
- 02
Cover and leave at room temperature for 8 hours, or 24 hours in the fridge. The long slow rise is what gives the crust its flavour and its blisters; a quick one-hour rise does not.
- 03
Divide into four balls, tuck them tight underneath, and rest covered for a final 2 hours until soft and puffy.
Topping and baking
- 04
Heat the oven as hot as it goes with a pizza steel or an upturned heavy tray inside, for at least 45 minutes.
- 05
Crush the with your hands and season with . Do not cook them — the sauce cooks on the pizza.
- 06
Stretch a ball on a floured surface from the middle outwards, leaving the outer 2 cm untouched so it puffs into a rim. Never use a rolling pin; it presses out the air you spent hours making.
- 07
Spread a thin layer of , scatter torn , and slide it onto the hot surface.
- 08
Bake for 6 to 10 minutes until the rim is puffed and spotted brown. Add and a thread of as it comes out, not before.
Notes
- Drain the mozzarella well, ideally an hour ahead on kitchen paper. Wet mozzarella floods the base.
- A pizza steel beats a stone, and both beat a baking tray. What you are buying is stored heat hitting the base in the first 30 seconds.
- Less topping than feels right. A Neapolitan pizza is mostly bread, and an overloaded base will not cook through.

- Butternut Squash RisottoRisotto alla zucca with butternut squash used two ways: half diced small and cooked into the rice until it melts and turns it orange, half roasted in cubes for the top. Shallots, sage and dry white wine make the base, hot vegetable stock goes in a ladle at a time, and cold butter and Parmesan are beaten in off the heat.
- Creamy Mushroom PastaTagliatelle in a cream sauce built on mixed mushrooms browned hard in two batches, so they turn golden and meaty instead of stewing in their own juices. Garlic, thyme and a splash of white wine go into the browned pan, then double cream and Parmesan, loosened with starchy pasta water into a glossy sauce that coats every ribbon, with lemon zest and parsley to cut the richness.
- Pear CakeA soft, rustic Italian pear cake. Eggs and sugar are whisked until thick and pale, then enriched with melted butter, milk, lemon zest and vanilla, with diced pear folded through the batter and thin slices fanned over the top. The fruit keeps the crumb moist, and a dusting of icing sugar is its only finish.
