Butternut Squash Risotto
By Groceree
Also known as Risotto alla Zucca · Pumpkin Risotto
Risotto alla zucca with butternut squash used two ways: half diced small and cooked into the rice until it melts and turns it orange, half roasted in cubes for the top. Shallots, sage and dry white wine make the base, hot vegetable stock goes in a ladle at a time, and cold butter and Parmesan are beaten in off the heat.

Ingredients
butternut squash1 kg
risotto rice320 g
vegetable stock1.2 l
shallots2
sage16 leaves
dry white wine100 ml
butter60 g
Parmesan70 g
olive oil3 tbsp
salt
black pepper
Instructions
- 01
Heat the oven to 200°C. Peel the , halve it lengthways and scoop out the seeds. Cut half the flesh into 2 cm cubes for roasting (the solid neck gives the neatest cubes) and the rest into 1 cm dice to cook into the risotto.
- 02
Toss the 2 cm cubes on a large baking tray with 2 tbsp of the and a little and , and spread them out in a single layer with space between them so they brown rather than steam. Roast for 25 to 30 minutes, turning once, until tender and caramelised at the edges, then keep them warm in the turned-off oven.
- 03
Bring the to a bare simmer in a saucepan and keep it hot over low heat. Finely chop the and 4 of the leaves, and finely grate the .
- 04
Melt 20 g of the with the remaining 1 tbsp of in a wide, heavy pan (about 28 cm) over medium heat. Fry the 12 whole leaves for 20 to 30 seconds, until they darken and crisp, then lift them onto kitchen paper for the top.
- 05
Lower the heat, add the , the chopped and a pinch of to the same pan and cook for 6 minutes, stirring, until soft and translucent but not coloured. Add the 1 cm dice of and cook for 5 minutes more, until it starts to soften at the edges.
- 06
Add the and stir for 2 minutes, until the grains are hot and glassy at the edges. Pour in the and stir until it has almost evaporated.
- 07
Add the hot a ladle at a time, stirring often and adding the next only when the last has almost been absorbed. Keep it at a lively simmer, and now and then press some of the against the side of the pan so it breaks down and turns the orange.
- 08
After 16 to 18 minutes, start tasting. The risotto is ready when the is tender but still has a slight bite in the centre and the risotto is loose enough to spread slowly when spooned onto a plate. There may be left over.
- 09
Take the pan off the heat. Dice the remaining 40 g of straight from the fridge, add it with most of the and beat hard with a wooden spoon for 1 minute, until the risotto turns creamy and glossy. This is the mantecatura. Season with and , cover and rest for 2 minutes.
- 10
Spoon into warm shallow bowls and top with the roasted and the crisp leaves. Serve the rest of the at the table.
Notes
- Dice the squash for the rice small, about 1 cm. Small pieces melt into the risotto and colour it orange; large ones stay as chunks and leave the rice pale.
- Beat in the butter cold and off the heat. Over a flame it melts into grease instead of emulsifying, and the Parmesan turns stringy.
- A dense, sweet pumpkin such as Delica or Hokkaido works just as well as butternut squash. Avoid watery carving pumpkins, which make the risotto thin and bland.
