Creamy Mushroom Pasta
By Groceree
Also known as Mushroom Tagliatelle · Pasta Panna e Funghi
Tagliatelle in a cream sauce built on mixed mushrooms browned hard in two batches, so they turn golden and meaty instead of stewing in their own juices. Garlic, thyme and a splash of white wine go into the browned pan, then double cream and Parmesan, loosened with starchy pasta water into a glossy sauce that coats every ribbon, with lemon zest and parsley to cut the richness.

Put a large pan of water on to boil for the pasta. Brush any soil off the , trim the woody stalk ends and slice or tear them into pieces about 5 mm thick, keeping them a similar size so they brown evenly. Any mix works, such as chestnut, oyster and shiitake.

Finely chop the , strip the leaves from the , finely grate the and the zest of the , and chop the .
- 03
Heat half the in a large frying pan, about 30 cm across, over a high heat until it shimmers. Add half the in a single layer and leave them untouched for 3 minutes, until browned underneath, then toss and fry for 2 to 3 minutes more, until golden all over and any liquid has gone. Season with a pinch of and tip them onto a plate.

Notes
- Brown the mushrooms in two batches in a wide, very hot pan and leave them alone at first. Crowded, they release their water and stew grey and rubbery instead of turning golden.
- Add the Parmesan off the heat with a splash of pasta water. Over a flame the cheese clumps into strings; the starchy water binds it and the cream into a glossy sauce.
- Pappardelle works as well as tagliatelle. Fresh egg pasta of either kind cooks in 2 to 3 minutes, so put it in only once the cream is in the pan.
