By Groceree

Little yeast-risen pancakes, half buckwheat, cooked in a dimpled pan until puffed and pale gold, then buried under butter and icing sugar. Eaten hot, twelve at a time.

Melt 15 g of the . Heat a poffertjes pan over medium heat and brush each hollow with the melted .

  5. 05

Fill each hollow almost to the top with batter, from a jug or squeeze bottle. When the edges set and the surface loses its shine, after about 90 seconds, turn each one with a fork or skewer.

  6. 06

Give them 1 more minute until puffed and golden on both sides, and keep them warm while you brush the hollows with more melted and cook the rest.

Notes

  • Buckwheat is what makes them poffertjes rather than tiny pancakes. It brings the faint earthiness and the tender, almost custardy centre.
  • Yeast, not baking powder. The hour of rising gives the flavour and the lift that a chemical raiser cannot.
  • No poffertjes pan? An æbleskiver or takoyaki pan works; failing that, drop teaspoons of batter into a buttered frying pan — but the dimpled shape is half of what they are.
