Pear Cake
By Groceree
Also known as Torta di Pere
A soft, rustic Italian pear cake. Eggs and sugar are whisked until thick and pale, then enriched with melted butter, milk, lemon zest and vanilla, with diced pear folded through the batter and thin slices fanned over the top. The fruit keeps the crumb moist, and a dusting of icing sugar is its only finish.

Instructions
- 01
Heat the oven to 180°C, or 160°C fan. Melt the in a small pan over a low heat and leave it to cool. Brush a 24 cm springform tin with a little of the and line the base with baking paper.
- 02
Finely grate the zest of the and set it aside. Peel, quarter and core the . Cut 2 of them into 1.5 cm dice and the other 2 into slices 5 mm thick, then toss all the with 1 tbsp of juice squeezed from the so they do not brown.
- 03
In a large bowl, whisk the , , zest and with an electric whisk for 5 minutes, until pale, thick and doubled in volume. The mixture should fall from the whisk in a ribbon that sits on the surface before sinking in.
- 04
With the whisk on low, pour in the melted in a thin stream, then the and .
- 05
Set aside 1 tbsp of the for the . Sift the rest of the and the over the bowl and fold them in with a spatula, stopping as soon as no dry shows; overmixing knocks out the air.
- 06
Toss the diced with the reserved and fold them into the batter, along with the , chopped into 1 cm chunks, if using.
- 07
Scrape the batter into the tin and level it. Fan the slices over the top in overlapping circles, pressing them in lightly.
- 08
Bake for 45 to 55 minutes, until risen and deep golden and a skewer pushed into the centre between the slices comes out clean, apart from a little moist . If the top browns too fast, cover it loosely with foil for the last 15 minutes.
- 09
Leave the cake in the tin for 15 minutes, then release the sides and let it cool on a rack for at least 1 hour. Warm, the soft crumb tears when it is cut.
- 10
Just before serving, dust the cake with the through a small sieve. Added too early, it melts into the moist top.
Notes
- Use pears that are ripe but still firm, such as Conference, Williams or Abate. Soft, juicy pears release water as they bake and leave the crumb around them soggy.
- Do not cut the whisking short. The air beaten into the eggs and sugar is what lifts the batter around the weight of the fruit.
- For a lighter cake that stays moist longer, use 90 ml of mild olive oil instead of the butter, as many Italian home cooks do.
