By Groceree

The Provençal vegetable stew done properly: each vegetable fried separately so it keeps its own texture, then brought together briefly at the end rather than boiled into a mush.

Ingredients

  • aubergines1
  • courgettes2
  • red peppers2
  • onions2
  • ripe tomatoes600 g
  • garlic cloves4
  • olive oil6 tbsp
  • bay leaves1
  • thyme3 sprigs
  • basil1 handful
  • salt
  • black pepper

Instructions

  1. 01

Cut the into 2 cm cubes, them and leave them in a colander for 20 minutes, then pat dry. This draws out water so they fry rather than steam.

  2. 02

While the drains, cut the and into 2 cm pieces and thinly slice the and . Score a cross in the base of each , cover them with boiling water for 1 minute, then peel and chop them.

  3. 03

Fry the in over medium-high heat until golden on all sides, and set aside. Do the same with the , then the , each on their own.

  4. 04

Lower the heat, add a little more and cook the sliced slowly for 10 minutes until soft. Add the sliced for 1 minute.

  5. 05

Add the peeled chopped , the leaf and the and simmer for 20 minutes until the mixture thickens and loses its wateriness.

  6. 06

Fold the fried , and back in and cook for 5 minutes more — just long enough to marry them. Longer and you undo the separate frying.

  7. 07

Remove the leaf and stalks, season with and freshly ground , tear in the , and serve warm or at room temperature.

Notes

  • Frying each vegetable separately is the whole technique. Thrown in together they release water and stew into a uniform mush.
  • It tastes better an hour after cooking, and better again the next day.
  • Good at room temperature with bread, which is how it is most often eaten in Provence.
