Poached Pears in Red Wine
By Groceree
Also known as Poires au Vin Rouge
Firm pears peeled whole with their stalks on, poached in red wine with sugar, cinnamon, star anise, cloves, orange peel and vanilla, and turned as they simmer so they colour an even ruby. The wine is then boiled down to a glossy spiced syrup to spoon over, warm or chilled.

Ingredients
pears4
red wine750 ml
caster sugar150 g
cinnamon sticks1
star anise2
whole cloves4
oranges1- vanilla pod1
crème fraîche (optional)150 g
Instructions
- 01
Scrub the and pare off a strip of peel about 8 cm long with a vegetable peeler, leaving the bitter white pith behind. Split the lengthways and scrape out the seeds with the tip of a knife.
- 02
Put the , , , , , peel and the and its seeds in a deep saucepan about 22 cm across, in which the will fit snugly on their sides. Warm over a medium heat, stirring, until the has dissolved.
- 03
Meanwhile, peel the with a vegetable peeler, leaving the stalks on and keeping their shape smooth. Cut a thin slice off the base of each so it will stand upright, then scoop out the core from the base with a melon baller or teaspoon.
- 04
Lower the into the straight away so they do not brown, and bring it to a gentle simmer. Lay a circle of baking paper with a small hole in the centre on the surface; it traps the steam so the parts above the colour too.
- 05
Simmer gently for 25 to 35 minutes, turning the every 10 minutes so they colour evenly, until a thin knife slides into the thickest part with no resistance. Riper are ready sooner, very firm ones take longer.
- 06
Lift the into a serving dish with a slotted spoon. Turn up the heat and boil the , uncovered, for 15 to 20 minutes, until it has reduced to about 250 ml and coats the back of a spoon. It thickens further as it cools, so stop before it turns sticky.
- 07
Strain the syrup over the and baste them until glossy. Set the and beside them to decorate, if you like.
- 08
Serve warm, with the alongside, if using. To serve the chilled, leave them to cool in the syrup, turning them now and then, and chill until cold, ideally overnight; the colour deepens as they sit.
Notes
- Choose firm, slightly underripe pears such as Conference or Williams. Ripe, juicy pears go soft on the outside before the centre is tender.
- Use a fruity, medium-bodied red you would happily drink. Boiling it down concentrates its flavour, harsh tannins included.
- The pears keep for 4 days in their syrup in the fridge and colour more deeply each day. Warm them gently in the syrup to serve them hot.
