Sambal Oelek

By Groceree

Also known as Sambal Ulek

Red chillies ground coarsely with salt, a little sugar and vinegar — the base sambal of every Indonesian table. Fried in oil until it darkens so it keeps, or left raw for a sharper bite.

  • red chillies300 g
  • garlic cloves (optional)3
  • salt2 tsp
  • caster sugar1 tsp
  • white wine vinegar2 tbsp
  • vegetable oil3 tbsp
  • shrimp paste (optional)1 tsp

Instructions

  1. 01

Pull the stems off the and boil them for 5 minutes to soften them, then drain well. This lets them grind easily and helps the sambal keep.

  2. 02

Pound them in a mortar with the , or pulse in a processor. Oelek means to grind, and the texture should stay coarse — never a smooth purée.

  3. 03

For sambal terasi, toast the in a dry pan for 1 minute until it smells sharp, then pound it in with the .

  4. 04

Peel and crush the , if using, and add it with the and the , working them through.

  5. 05

Fry the sambal in the over medium heat for 8 to 10 minutes, stirring, until it darkens and the separates out. For raw sambal, skip the frying, keep it in the fridge and eat it within 3 days.

  6. 06

Cool and store in a clean jar under a film of . Fried, it keeps for a month in the fridge.

Notes

  • Coarse, not smooth. Oelek refers to the grinding, and a blitzed sambal loses the texture that makes it worth making.
  • Frying it until the oil separates is what makes it keep and deepens the flavour. Raw sambal is sharper and brighter but has to be eaten within a few days.
  • Sambal oelek is the plain base. Adding toasted terasi gives sambal terasi, which is funkier and the one most used at the table.
