Chana Masala

By Groceree

Also known as Chole · Chickpea Curry

Chickpeas simmered in a dark onion and tomato masala with amchur and garam masala stirred in at the end — tangier and drier than a creamy curry, and vegan without trying.

Ingredients

  • sunflower oil3 tbsp
  • cumin seeds1 tsp
  • onions2
  • garlic cloves4
  • fresh ginger3 cm
  • green chillies1
  • tinned chopped tomatoes400 g
  • ground coriander2 tsp
  • ground turmeric½ tsp
  • chilli powder1 tsp
  • tinned chickpeas800 g
  • water100 ml
  • amchur1 tsp
  • garam masala1 tsp
  • coriander1 handful
  • salt
  • lemons½

Instructions

  1. 01

Finely chop the . Heat the in a heavy pan and fry the for 30 seconds until they crackle and smell nutty.

  2. 02

Add the and cook over medium heat for 12 to 15 minutes until genuinely browned, not just softened. This is the longest step and the one that decides how the dish tastes. Meanwhile, crush the , grate the and finely chop the .

  3. 03

Stir in the , and for 1 minute, then add the , and .

  4. 04

Add the and cook for 8 to 10 minutes, pressing them down, until the mixture thickens and the separates at the edges.

  5. 05

Drain and rinse the and tip them in with the , season with , and simmer for 10 minutes. Crush a spoonful of against the side of the pan to thicken the sauce.

  6. 06

Take off the heat and stir in the , and the juice of the half. Adding these at the end keeps them bright rather than cooking them flat.

  7. 07

Roughly chop the and scatter it over.

Notes

  • Amchur is what makes this taste like chana masala rather than a generic chickpea curry. Extra lemon juice is the fallback, not an equal.
  • Browning the onions properly is not optional — pale onions give a thin, sweet sauce with no depth.
  • Dried chickpeas soaked overnight and simmered until soft are better still, and the cooking water thickens the sauce.
  • Serve with rice or roti.
