Harvest Bowl

By Groceree

Also known as Autumn Harvest Bowl · Fall Harvest Bowl

Chewy wild rice topped with roasted sweet potato, Brussels sprouts caramelised on their cut sides, raw kale massaged with lemon until silky, crisp apple, dried cranberries and toasted almonds. A cider vinaigrette with maple syrup and Dijon mustard pulls the earthy, sweet and sharp parts together, and everything but the apple keeps well when made ahead.

Ingredients

  • sweet potatoes500 g
  • Brussels sprouts400 g
  • kale200 g
  • apples2
  • dried cranberries40 g
  • flaked almonds40 g
  • lemons1
  • cider vinegar3 tbsp
  • maple syrup2 tbsp
  • Dijon mustard1 tsp
  • garlic cloves1
  • olive oil9 tbsp
  • salt
  • black pepper

Instructions

  1. 01

Rinse the in a sieve under cold running water. Bring a large pan of water to the boil, add the and 1 tsp and simmer, uncovered, for 40 to 50 minutes, until the grains are tender but still chewy and many have split open to show their pale insides. Check the packet too, as some cooks faster.

  2. 02

Meanwhile, heat the oven to 220°C. Peel the and cut them into 2 cm cubes. Toss them on a large baking tray with 2 tbsp of the and a little and , then spread them out in a single layer.

  3. 03

Trim the base of each , pull off any yellowed outer leaves and halve the through the core. Toss them on a second baking tray with 1 tbsp of the and a pinch of , then turn them all cut side down.

  4. 04

Roast both trays, swapping their shelves halfway. Take the out after 20 to 25 minutes, when their cut sides are deep brown and a knife slips easily into the core. Give the 25 to 30 minutes, turning it once, until golden at the edges and soft right through.

  5. 05

While they roast, squeeze the ; there should be 2 to 3 tbsp of juice. Strip the leaves from their tough stalks, tear them into bite-sized pieces and put them in a large bowl with 1 tbsp of the juice, 1 tbsp of the and a pinch of . Squeeze and rub the leaves with both hands for 2 to 3 minutes, until they turn dark green, shrink by about a third and feel silky.

  6. 06

Toast the in a dry frying pan over a medium heat for 2 to 4 minutes, shaking the pan often, until golden. Tip them onto a plate straight away so they do not scorch in the hot pan.

  7. 07

For the dressing, finely grate the into a bowl and whisk it with the , the , the and a good pinch of and , then whisk in the remaining 5 tbsp of a little at a time until the dressing looks glossy and slightly thickened. Taste and add a little more if it seems flat.

  8. 08

Core the , cut them into thin slices and toss them with the last of the juice so they stay pale.

  9. 09

Drain the well, return it to the pan off the heat, cover and leave it for 5 minutes to steam dry. Fork it through with a little and .

  10. 10

Divide the between 4 wide bowls. Arrange the , , and slices on top in separate piles, scatter over the and and drizzle with the dressing. Serve warm or at room temperature.

Notes

  • Roast the sprouts cut side down and do not turn them. Pressed flat against the hot tray, the cut faces caramelise deep brown, which tames their bitterness and makes them taste sweet and nutty.
  • Massaging raw kale with lemon juice, oil and salt breaks down its tough fibres, so it turns tender and less bitter without any cooking, and unlike lettuce it does not go limp in the fridge.
  • For lunches through the week, spread the rice out to cool quickly, then keep it, the roasted vegetables, the kale and the dressing in separate containers in the fridge for up to 4 days. Slice the apple on the day so it stays crisp and pale, and whisk the dressing again before using, since it separates in the fridge.
