Kabak Tatlısı
By Groceree
Also known as Turkish Pumpkin Dessert · Turkish Candied Pumpkin
The Turkish autumn dessert: peeled pumpkin layered with sugar and left overnight, so the sugar draws out enough juice to cook the pieces in with no water at all. Simmered gently, they turn translucent and glossy but hold their shape, and are served cool, drizzled with tahini and scattered with crushed walnuts.

Ingredients
pumpkin1½ kg
caster sugar300 g- tahini6 tbsp
walnuts60 g- kaymak or clotted cream (optional)150 g
Instructions
- 01
Cut the into wedges, scrape out the seeds and stringy fibres with a spoon and cut away the skin with a sharp knife. Cut the flesh into pieces about 8 cm long, 5 cm wide and 2.5 cm thick; there should be about 1 kg.
- 02
Arrange half the in a snug single layer in a wide, heavy pan about 26 cm across that has a lid, and scatter half the over it. Lay the rest of the on top and scatter over the rest of the .
- 03
Cover the pan and leave it in a cool place or the fridge overnight, at least 8 hours. The dissolves and draws the juice out of the , so by morning the pieces sit half covered in syrup.
- 04
Set the covered pan over a medium heat without adding any water. When the syrup bubbles, after about 5 minutes, turn the heat to low and simmer gently for 30 minutes.
- 05
Turn each piece over carefully with two spoons. Simmer uncovered for 15 to 20 minutes more, spooning the syrup over now and then, until the is translucent and glossy, a skewer slides in with no resistance and the syrup has thickened.
- 06
Take the pan off the heat and leave the to cool in its syrup for at least 1 hour; it firms up as it cools. Chill it if you prefer it cold.
- 07
Stir the well in its jar, since the oil separates on standing, and crush the roughly in a mortar or with a rolling pin.
- 08
Lift the onto a serving plate with a spoonful or two of its syrup, drizzle the over and scatter the on top. Add a spoonful of to each plate if you like.
Notes
- Pick a dense, dry-fleshed pumpkin with deep orange flesh, such as Crown Prince or butternut squash. Watery carving pumpkins give off too much juice and turn mushy before they candy.
- Add no water at any point. The juice the sugar pulls out overnight is all the liquid needed, and water would thin the syrup and leave the pieces soft rather than glossy.
- It keeps, covered, in the fridge for up to 4 days. Add the tahini and walnuts only when serving, so the nuts stay crisp.
