Brezeln
By Groceree
Also known as Bavarian Pretzels · Laugenbrezel · Pretzels
Soft pretzels with a deep mahogany crust from a dip in alkaline solution before baking, sprinkled with coarse salt. The dip is what makes them pretzels and not bread.

Ingredients
- strong white flour500 g
dried yeast7 g
water280 ml
butter30 g
caster sugar1 tsp
salt1½ tsp
bicarbonate of soda70 g
coarse sea salt2 tbsp
Instructions
- 01
Spread the on a lined tray and bake it at 120°C for 1 hour. This turns it into sodium carbonate, which is strong enough to give a real pretzel crust.
- 02
Mix the and into the lukewarm , then work in the , the and the softened and knead for 10 minutes into a firm, smooth dough.
- 03
Divide into 8 and rest for 15 minutes.
- 04
Roll each into a rope 60 cm long, thick in the middle and thin at the ends.
- 05
Make a U, cross the ends twice, and press them onto the thick base to form the pretzel shape.
- 06
Chill uncovered for 30 minutes so the surface dries — dry pretzels take the dip evenly. Meanwhile, heat the oven to 220°C.
- 07
Dissolve the baked in 1.5 litres of water in a stainless-steel or glass bowl, wearing gloves; the solution corrodes aluminium, so keep it away from aluminium pans and trays. Dip each pretzel for 20 seconds, lift out with a slotted spoon and put on a lined tray.
- 08
Slash the thick part, sprinkle with , pretzel if you have it, and bake at 220°C for 15 minutes until deep brown.
Notes
- Bake the bicarbonate first. Plain bicarbonate gives a pale, weak crust; baked, it is close to the lye used by German bakeries.
- Wear gloves for the dip. Baked soda is alkaline enough to irritate skin.
- Pretzels are best within hours of baking and go stale quickly. Freeze any extras straight away.
