crème fraîche200 g
Instructions

Peel, halve and core the and toss them with the juice of the half. Use firm — Bramleys collapse into sauce.
- 02
Melt the and in a 24 cm ovenproof frying pan over medium heat and cook, without stirring, until it turns a deep amber caramel.
- 03
Take it off the heat, stir in the if using, then pack the halves in tightly, cut side up, curved side down into the caramel. They shrink, so crowd them.
- 04
Return to medium heat and cook for 20 minutes, spooning caramel over, until the have softened and the caramel has thickened. Meanwhile, heat the oven to 200°C, roll the out a little and cut a 26 cm circle; keep it in the fridge.
- 05
Take the pan off the heat, lay the over the top and tuck the edges down inside the pan, around the .
- 06
Bake for 25 to 30 minutes, until the is deep gold and puffed.
- 07
Rest for 5 minutes only. Wearing oven gloves (the handle is as hot as the oven), put a plate wider than the pan over it and invert it in one confident movement, away from you. Left to cool, the caramel sets and the tart cements itself to the pan.

Serve warm with .
Notes
- Turn it out while hot: 5 minutes is the window; after 15 minutes the caramel has set. If it sticks, warm the pan on the hob for 1 to 2 minutes and try again.
- Firm apples, packed tight. They lose a third of their volume and a loosely packed tart falls apart when inverted.
- Take the caramel to deep amber. Pale caramel gives a tart that is merely sweet, with none of the bitterness that makes this work.
