- 04
Sift over 130 g of the and the and fold in gently, then fold in the browned .
- 05
Cover and refrigerate for at least 3 hours, or overnight. The cold batter hitting a hot oven is what makes the hump.
- 06
Brush the madeleine tin thoroughly with some of the remaining , softened, dust it with some of the remaining , tapping out the excess, and chill it too.
- 07
Heat the oven to 220°C. Spoon the cold batter into the moulds, three quarters full, without spreading it. If your tin holds 12, bake in two batches: keep the rest of the batter in the fridge, then wipe, , and chill the tin again before the second batch.

Notes
- The long chill is the secret to the hump. Cold batter in a hot oven sets at the edges first and pushes up in the middle.
- Brown the butter. Plain melted butter gives a flatter-tasting madeleine.
- Eat them the same day. They are at their best within an hour of baking and go stale fast.
