  • butter60 g
  • lemons1

Instructions

Mix the , the , the , 1 tbsp of the and the lukewarm to a soft and knead for 5 minutes until smooth.

  2. 02

Divide into 4, cover and rest for 30 minutes. Rested rolls far thinner without springing back.

Filling

  1. 03

Wilt the , cool, squeeze out every drop of water and chop. A wet is what tears the gözleme and makes it soggy.

  2. 04

Finely chop the and soften it in the remaining . Crumble the , chop the and mix both with the , the and the (pul biber). No salt — the is enough.

Cooking

  1. 05

Roll each piece out as thin as you possibly can, into a large rectangle. You should almost see through it.

  2. 06

Spread over one half, fold the other half over and press the edges to seal.

  3. 07

Melt the . Cook each gözleme on a hot dry griddle or heavy pan for 3 to 4 minutes a side, brushing with the , until blistered and golden in patches.

  4. 08

Cut the into wedges. Cut the gözleme into pieces and serve hot with the wedges.

Notes

  • Roll it thinner than seems reasonable. The whole appeal is a crisp, papery shell with a generous filling.
  • Squeeze the spinach until your hands hurt. It is the single most common reason gözleme splits.
  • Brush with butter as it cooks rather than cooking it in fat. That keeps it crisp and stops it going greasy.
