vegetable stock1.2 l
onions1
garlic cloves1
dry white wine120 ml
butter80 g
Parmesan70 g
olive oil3 tbsp
flat-leaf parsley2 tbsp
salt
black pepper
water300 ml
Instructions
- 01
Soak the in the 300 ml of just-boiled for 20 minutes. Lift them out, chop them, and strain the soaking liquid through a sieve lined with kitchen paper into the — that liquid is most of the flavour. Bring the to a bare simmer and keep it there.
- 02
Slice the and fry them in the over high heat, in batches, until well browned. Season with and and set aside. Crowded steam and go grey.
- 03
Finely chop the and , finely grate the and chop the . Soften the in half the over low heat for 8 minutes without colouring, adding the at the end.
- 04
Stir in the and toast it for 2 minutes until the grains turn translucent at the edges.
- 05
Pour in the and stir until it has been absorbed.
- 06
Add the hot a ladleful at a time, stirring often and only adding more once the last has been absorbed. After 10 minutes, fold in the and most of the fried . The takes 18 to 20 minutes in all.
- 07
When the is al dente and the risotto still loose, take it off the heat and beat in the hard with the rest of the , cold. This is the mantecatura and it is what makes it creamy.
- 08
Rest for 2 minutes, then serve with the remaining and the scattered over.
Notes
- Use the porcini soaking liquid, strained through a cloth to catch the grit. Throwing it away is throwing away the dish.
- Beat the butter in cold and off the heat. Melted in over a flame it splits and the risotto turns greasy rather than creamy.
- It should spread slowly on the plate — all’onda, like a wave. A risotto that stands up in a mound has gone too far.
