Ingredients

- veal shanks4
plain flour3 tbsp
onions1
carrots1
celery sticks2
dry white wine250 ml
chicken stock500 ml
tinned chopped tomatoes200 g
butter40 g
olive oil2 tbsp
bay leaves1
salt
black pepper- kitchen string
Gremolata
lemons1
garlic cloves1
flat-leaf parsley1 handful
Instructions
Braise
- 01
Heat the oven to 160°C. Tie each round its middle with the so it holds together as it cooks.
- 02
Season with and and dust with , then brown hard in the and on both sides in a wide ovenproof casserole. Lift out.
- 03
Finely chop the , and and soften them in the same pan for 12 minutes without rushing.
- 04
Pour in the and reduce by half, scraping the base clean.
- 05
Add the , and , and lay the back in flat, in one layer, with the bone pointing up so the marrow stays in. The liquid should come two thirds up.
- 06
Cover and transfer to the oven for 2 hours, until a fork goes through the meat with no resistance.
- 07
Discard the leaf, and snip and remove the from each . If the sauce is thin, lift the shanks out and reduce it on the hob.
Gremolata
- 08
Finely grate the zest of the , then chop it together with the and until fine. Make it just before serving — it fades within the hour.
- 09
Scatter the over the at the table.
Notes
- Keep the shanks lying flat throughout. Turned on their edge, the marrow slides out into the sauce and you lose the best part.
- Gremolata goes on raw and last. Cooked into the sauce it tastes of nothing; raw, it cuts two hours of braised richness.
- The string is not decorative. Without it the shank falls apart in the pot and arrives as stew.
- In Milan osso buco is served with risotto alla milanese; see that recipe.

Eggs and sugar are whisked until thick and pale, then enriched with melted butter, milk, lemon zest and vanilla, with diced pear folded through the batter and thin slices fanned over the top.
