carrots1- glass noodles (optional)50 g
- dashi stock400 ml
soy sauce4 tbsp
mirin3 tbsp
sake2 tbsp
caster sugar2 tbsp
vegetable oil1 tbsp
peas50 g
Instructions
- 01
Slice the very thinly. Peel the and cut them into large chunks, cut the into wedges and the into chunky diagonal pieces, giving it a quarter turn between cuts. Round off the sharp edges of the potato chunks with a knife. It stops them breaking up in the pot.
- 02
Heat the in a wide pan over medium-high heat and fry the until it just changes colour, then add the wedges, the chunks and the and toss for 1 minute.
- 03
Add the , , and , and bring to a simmer. Skim off any foam.
- 04
Cover with a drop lid — a circle of baking paper laid directly on the surface. This keeps everything submerged and cooking evenly with little liquid.
- 05
Simmer for 10 minutes, then add the and cook for 10 to 15 minutes more, until the are tender.
- 06
Add the for the last few minutes. If using the , soak them in hot water for 5 minutes, drain, cut them into shorter lengths and add them with the .
- 07
Let it rest off the heat for 10 minutes — the soak up the flavour as it cools.
Notes
- Use a drop lid, otoshibuta. It lets you cook in very little liquid without drying out the top.
- Add the soy sauce partway through, not at the start, so the potatoes do not toughen.
- Rest it before serving. Nikujaga tastes better once the potatoes have absorbed the broth.

- Kabocha no NimonoChunks of kabocha simmered skin side down in dashi with sugar, mirin, sake and soy sauce under a drop lid until just tender, then left to cool in the liquid so the sweet-salty seasoning soaks right in. Patches of skin are peeled away to let the flavour in and the edges are bevelled so each piece holds its shape, and the dense flesh turns soft, sweet and almost chestnut-like.
- ChawanmushiA savoury egg custard set so gently in dashi that it barely holds its shape, hiding a prawn, a piece of chicken and a shiitake. Silky, never bubbled.
- HambaguJuicy patties of beef and pork mince with softened onion and milk-soaked panko, seared then steamed until plump, and glazed in a quick sauce of ketchup, Worcestershire sauce, red wine and the pan juices. A favourite of Japanese home cooking.
