Instructions
Dough
- 01
Mix the into the warm , add the , and , and knead for 8 minutes until smooth. Cover and rise for 1 hour. Heat the oven as hot as it goes with a tray or stone inside for at least 30 minutes while the rises.
Topping
- 02
Roughly chop the , deseed the and peel the , then blitz them with the and the to a rough paste and squeeze out excess liquid through a sieve.
- 03
Mix with the , , , and . The paste should be spreadable, not chunky.
Baking
- 04
Divide the into four. Roll one piece as thin as you possibly can — thinner than a pizza base, almost translucent at the edges — and spread a thin layer of right to the edges, thinner than looks right, because it needs to cook through in minutes.
- 05
Slide it on a sheet of baking paper onto the hot tray or stone and bake for 6 to 8 minutes until the edges are crisp and the is cooked through, with no pink left. Roll, top and bake the other three the same way.
To serve
- 06
Thinly slice the and cut the into wedges. Scatter the and the leaves over each lahmacun, squeeze the over, roll up and eat with your hands.
Notes
- Squeeze the vegetable paste out. Wet topping steams the dough and you get a floppy base.
- Thin is everything, in both dough and topping. Lahmacun is not a Turkish pizza however often it is called one.
- They keep badly, so eat them as they come out of the oven.
