Köfte
By Groceree
Also known as Turkish Meatballs
Turkish grilled meatballs: beef and lamb mince kneaded with grated onion, cumin and soaked bread, rested in the fridge for at least 2 hours, then shaped by hand into flat ovals and grilled. The rest in the fridge is what firms the mixture enough to hold together without egg.

Instructions
Köfte
- 01
Grate the on the coarse side of a box grater, then squeeze it hard in your fist or in a clean cloth and keep the pulp. The juice left behind is water, and water in the mixture is what makes break apart on the grill.
- 02
Crush the to a paste. Soak the in a little water for 2 minutes, squeeze it dry and crumble it into a bowl with the and , the pulp, the , the , the , 1¼ tsp of the and freshly ground .
- 03
Knead for 5 minutes, lifting the mixture and slapping it back into the bowl every so often, until it lightens in colour and starts to cling to the side of the bowl in one mass.
- 04
Cover and rest in the fridge for at least 2 hours, or overnight. This is the step people skip: the and spices work through the meat and the mixture firms up enough to shape cleanly.
- 05
With damp hands, divide the mixture into 16 and roll each piece into a ball, then flatten it into an oval about 1.5 cm thick, smoothing the edges so they do not crack open.
- 06
Grill over high heat, on coals or a ridged pan brushed with 1 tbsp of the , for 3 to 4 minutes a side, turning once, until deeply marked and cooked through with no pink in the middle (75°C inside). Rest them for 2 minutes off the heat.
Piyaz
- 07
While the mixture rests, drain and rinse the . Thinly slice the , dice the and chop the . Toss the with the , and , the remaining 2 tbsp , the , the and the rest of the , and leave it to stand for at least 10 minutes, or chill it until the are grilled.
- 08
Cut the into wedges. Pile the onto the and serve with the wedges to squeeze over.
Notes
- The soaked bread is a binder rather than padding: it holds on to juices that would otherwise run out over the fire, and it keeps the texture short. That is also why no egg goes in, which would make the köfte bouncy and closer to a meatball for a sauce.
- A quarter teaspoon of bicarbonate of soda kneaded in with the salt is a common trick in Turkey. It slackens the texture so the köfte come out tender rather than dense, and it is worth it if you only have time for the two-hour rest.
- Shaped raw köfte freeze well. Open-freeze them on a tray, bag them once solid and cook from frozen for 2 more minutes a side, until there is no pink in the middle (75°C inside).
