Caldo Verde
By Groceree
The soup of the Minho: potatoes cooked to collapse and blended into a smooth pale base, with dark collard greens shredded to threads and dropped in at the very end. Slices of chouriço and a heavy pour of olive oil at the table carry most of the flavour, so both are worth buying well.

extra virgin olive oil6 tbsp
water1½ l- collard greens250 g
chouriço150 g
bay leaves1
salt
black pepper
Instructions
- 01
Peel the and cut them into chunks, roughly chop the and peel the . Put them in a large pan with the leaf, 2 tbsp of the , the and a good teaspoon of . Bring to the boil and simmer for 20 to 25 minutes, until the fall apart when pushed against the side of the pan.
- 02
While that cooks, cut the tough central stalk out of each leaf of the , then stack the leaves a few at a time, roll them into a tight cigar and slice across into threads 1 to 2 mm wide. Shake them loose. This is the part of the soup people judge it on, so take the time.
- 03
Slice the 5 mm thick and fry the slices in a dry pan over medium heat for 2 to 3 minutes a side, until the fat runs orange and the edges curl. Lift them onto kitchen paper and keep the orange fat in the pan.
- 04
Remove the leaf and blend the soup until completely smooth. It should be thin enough to pour but still coat a spoon; loosen with hot water if it has become too thick.
- 05
Bring the blended soup back to a simmer, stir in the and cook for 4 to 5 minutes only, until they are tender but still bright. Longer and they turn a dull olive green and taste stewed.
- 06
Season with and , stir in the fat from the pan and ladle into bowls. Lay the slices on top and pour a tablespoon of over each bowl at the table.
Notes
- The proper cabbage is couve galega, a flat dark Portuguese kale. Collard greens are the closest substitute sold outside Portugal; cavolo nero also works, and ordinary curly kale is the last resort because it curls rather than shredding into threads.
- A mandoline or the slicing disc of a food processor will not shred the leaves finely enough. A sharp knife and rolled leaves will.
- The blended base keeps for three days in the fridge and freezes well. Add the collard greens and the chouriço only to the portion you are about to eat, otherwise the greens go grey on reheating.
