  • chicken1.4 kg
  • onions1
  • spring onions3
  • garlic cloves4
  • carrots1
  • red peppers1
  • scotch bonnet chillies1
  • thyme5 sprigs
  • allspice berries1 tsp
  • soy sauce2 tbsp
  • tomato ketchup2 tbsp
  • brown sugar2 tbsp
  • chicken stock400 ml
  • vegetable oil3 tbsp
  • limes1
  • salt
  • black pepper

Instructions

  1. 01

Rub the , jointed into 8, with the juice of the — a Jamaican habit that also freshens the meat. Do not rinse it under the tap, which splashes raw- bacteria round the sink. Pat dry.

  2. 02

Crush the , chop the , slice the onion, deseed and slice the , and cut the into rounds. Season the hard with , freshly ground , half the crushed , half the chopped and some , and leave in the fridge for at least 1 hour.

  3. 03

Heat the in a heavy pot, add the and let it melt and go dark amber. It should smell toasted, not burnt — this is browning, and it happens fast.

  4. 04

Lay the in and turn it in the caramel until dark on all sides. Lift it out.

  5. 05

Soften the sliced , the remaining and , then add the , the , the whole and the remaining .

  6. 06

Return the , pour in the and add the , left whole. Simmer covered for 30 minutes.

  7. 07

Add the rounds and the sliced and cook uncovered for 15 minutes more, until the gravy has reduced and thickened and the is cooked through, with no pink at the bone.

  8. 08

Lift the out whole before serving.

Notes

  • The sugar goes from amber to acrid in about ten seconds. Have the chicken ready beside the pot before you start.
  • The scotch bonnet goes in whole and comes out whole. Burst it and the dish becomes about heat instead of flavour.
  • Marinating for an hour is the minimum; overnight is how it is actually done at home.
  • In Jamaica it is served with rice and peas: rice cooked with kidney beans, coconut milk and thyme.
