Beef Stew

By Groceree

Also known as Old-Fashioned Beef Stew · Classic Beef Stew

The American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.

Ingredients

  • beef chuck1.2 kg
  • plain flour4 tbsp
  • salt
  • black pepper
  • vegetable oil3 tbsp
  • onions2
  • garlic cloves4
  • tomato paste2 tbsp
  • red wine (optional)150 ml
  • beef stock1 l
  • Worcestershire sauce1 tbsp
  • thyme4 sprigs
  • bay leaves2
  • waxy potatoes700 g
  • carrots4
  • celery sticks3
  • frozen peas150 g
  • flat-leaf parsley1 handful

Instructions

  1. 01

Chop the and finely chop the .

  2. 02

Pat the dry with kitchen paper, trim off any thick pieces of hard fat and cut it into 4 cm chunks. Just before browning, toss the chunks in a large bowl with the and a generous seasoning of and until every piece is lightly coated.

  3. 03

Heat 1 tbsp of the in a large, heavy casserole of about 6 litres over medium-high heat. Shake the loose off a third of the and brown it for 5 to 6 minutes, turning the pieces, until deep brown on at least two sides, then lift it onto a plate. Brown the rest in 2 more batches, adding another 1 tbsp of each time and lowering the heat a little if the base starts to blacken.

  4. 04

Lower the heat to medium, add the and cook for 8 minutes, stirring and scraping up the browned bits from the base, until soft and golden. Stir in the and and cook for 2 minutes, until the paste darkens a shade.

  5. 05

Pour in the , if using, and let it bubble for 1 minute. Return the with its juices, add the , , and , and scrape the base of the pot clean with a wooden spoon. The liquid should just cover the meat.

  6. 06

Bring to a simmer, put the lid on and cook over the lowest heat for 1½ hours, stirring now and then so nothing catches on the base. Towards the end of that time, peel the and , and cut the into 4 cm chunks, the into 2 cm rounds and the into 2 cm pieces.

  7. 07

Stir in the , and , pushing them down into the liquid. Cover again and simmer for 45 to 60 minutes, until the gives way easily to a fork and the are tender but still hold their shape.

  8. 08

Fish out the stalks and . If the gravy is thinner than you would like, simmer it uncovered for 10 minutes. Stir in the and cook for 3 to 4 minutes, until hot through.

  9. 09

Taste and season with and . Chop the , scatter it over the stew and serve.

Notes

  • Brown the beef in batches and take it properly dark. Crowded, it steams and goes grey, and the crust and the browned bits on the base are where the gravy gets its colour and depth.
  • To cook it in the oven instead, put the covered pot in a 160°C oven once it simmers, for the same times. The heat comes from all sides, so nothing catches and it needs no stirring.
  • It keeps in the fridge for up to 3 days and tastes even better on the second. The potatoes drink up gravy overnight, so loosen it with a splash of water as it reheats.
