Baked Chicken and Potatoes
By Groceree
Also known as Chicken and Potato Traybake · Sheet Pan Chicken and Potatoes
Bone-in chicken thighs and drumsticks rubbed with smoked paprika and olive oil and roasted at 220°C on a bed of potato chunks, whole garlic cloves, lemon wedges and rosemary. Fat from the crisping skin drips into the potatoes, which get 10 more minutes on their own while the chicken rests, and the soft garlic and roasted lemon are squeezed into the pan juices that coat the potatoes.

Ingredients
chicken thighs600 g
chicken drumsticks600 g
floury potatoes1 kg
garlic cloves8
lemons1
rosemary4 sprigs
smoked paprika3 tsp
olive oil4 tbsp
salt2 tsp
black pepper
Instructions
- 01
Heat the oven to 220°C, or 200°C fan. Pat the dry all over with kitchen paper, paying most attention to the skin, and leave it on a plate.
- 02
Peel the , or leave the skins on, and cut them into 4 cm chunks. Tip them into a large roasting tray, about 30 × 40 cm, add 2 tbsp of the , 1 tsp of the , 1 tsp of the and a good grinding of , and toss until every piece is coated.
- 03
Lightly crush the with the flat of a knife, leaving them in their skins, and cut the into 8 wedges. Scatter the , the wedges and the sprigs among the and spread everything out in one layer.
- 04
Rub the and all over with the remaining 2 tbsp of , 2 tsp of and 1 tsp of , and season them with . Sit the pieces on top of the , skin side up, with gaps between them so the heat reaches the below.
- 05
Roast for 25 minutes, then take the tray out and turn any that are not under the chicken.
- 06
Roast for 20 to 25 minutes more, until the skin is crisp and a deep reddish brown and the juices run clear when the thickest is pierced near the bone. A probe there should read at least 75°C.
- 07
Lift the onto a warm plate, skin side up, and leave it uncovered to rest so the skin stays crisp. Turn the in the fat on the tray, spread them out again and roast for 10 minutes more, until golden at the edges.
- 08
Squeeze the soft out of its skins and the juice from the roasted wedges into the tray, add any juices from the plate and turn the in the pan juices. Sit the on top, skin side up, and serve.
Notes
- Use bone-in, skin-on pieces. Boneless or skinless chicken dries out before the potatoes are cooked, and it is the fat from the skin that bastes them.
- Dry the skin well before oiling it. Wet skin steams rather than crisps.
- Thighs and drumsticks are forgiving: they stay juicy well past 75°C, so leave them in a few minutes longer if the skin needs more colour.

- Beef StewThe American beef stew: chuck dusted in flour, browned hard in batches and simmered low in beef stock with tomato paste, Worcestershire sauce, thyme and bay until it yields to a spoon. Potatoes, carrots and celery go in partway so they cook through without collapsing, the flour thickens the gravy as it simmers, and peas are stirred through at the end.
- Braised Short RibsBone-in beef short ribs seasoned and seared hard, then cooked slowly in the oven in reduced red wine and beef stock with carrots, onion, celery, garlic, thyme, rosemary and bay until the meat slips from the bone. Strained, skimmed of fat and boiled down, the braising liquid turns into a dark, glossy sauce, and gremolata or parsley scattered over at the end cuts the richness.
