Vindaloo
By Groceree
Also known as Pork Vindaloo · Vindalho

Notes
- Kashmiri chillies are mild and intensely red. Twelve of them make the sauce deep crimson without making it inedible; this dish is meant to be sour first.
- Overnight in vinegar is not optional. It was originally a preserving method, and the sourness is the defining flavour.
- Pork is the original, from Goa’s Portuguese Catholic kitchens. Lamb works with the same timing; chicken thighs need only about 30 minutes.
- The name comes from carne de vinha d’alhos, Portuguese for meat in wine and garlic; in Goa the wine became vinegar.
- Serve with plain boiled rice.
