By Groceree

Also known as Cantonese Steamed Fish · Qing Zheng Yu

Whole sea bass steamed with ginger until just cooked, then covered with spring onion and coriander and doused with smoking-hot oil and soy so it sizzles. Cantonese simplicity.

Ingredients

  • whole sea bass2
  • ginger40 g
  • spring onions4
  • coriander1 handful
  • light soy sauce3 tbsp
  • Shaoxing wine1 tbsp
  • caster sugar1 tsp
  • water2 tbsp
  • vegetable oil4 tbsp

Instructions

  1. 01

Peel the ; thinly slice half of it and cut the rest into fine threads. Cut 2 of the into 5 cm lengths and the other 2 into fine threads. Score each , about 600 g each, two or three times on each side and stuff the cavities with the sliced and spring onion lengths.

  2. 02

Put the fish on heatproof plates that fit your steamer (a two-tier steamer takes one each; swap the tiers halfway), sprinkle with the , and steam over boiling water for 10 to 12 minutes. It is done when the flesh at the thickest part flakes from the bone.

  3. 03

Pour off the liquid that collects on the plates — it is fishy and cloudy — and discard the and from the cavities. Lift the fish onto a warm serving platter.

  4. 04

Warm the with the and the in a small pan until the dissolves.

  5. 05

Scatter the and threads and the leaves over the fish.

  6. 06

Heat the until it is just smoking, then pour it over the herbs so they sizzle.

  7. 07

Pour the warm around the fish and serve at once.

Notes

  • Do not overcook it. Cantonese steamed fish is judged on the flesh being just set and silky at the bone.
  • Pour away the steaming liquid before saucing. It carries the strong fishy taste.
  • The sizzling oil wilts the herbs and releases their fragrance — that sound is part of the dish.
