Notes
- Sauerkraut makes it kislye shchi, the sour winter version; fresh cabbage alone gives the lighter summer one. Both are correct.
- The soured cream goes in at the table, not the pot. Stirred in while cooking it splits.
- There is a Russian saying that yesterday’s shchi is better than today’s, and it is true.

- SharlotkaRussia's everyday apple cake: eggs and sugar whisked until thick and pale, flour folded in by hand, and the airy batter poured over a tin of tart apple chunks. There is no baking powder, as the eggs alone raise the sponge, which bakes light and moist around the soft, sharp apples under a thin, crackly sugar crust.
- Tykvennaya KashaRussian millet porridge for autumn mornings: diced pumpkin simmered in water until soft, then well-rinsed millet, then whole milk with a little sugar, cooked gently until thick, creamy and orange. Butter is stirred in at the end, and an optional 20 to 30 minutes in the oven gives the golden-skinned, baked texture of kasha from a Russian stove.
