Salmon Teriyaki
By Groceree
Also known as Teriyaki Salmon · Sake no Teriyaki

Salmon fillets pan-fried until the skin crisps, then glazed in the pan with soy sauce, mirin, sake and sugar reduced until sticky and shining. Ten minutes, and much better than bottled sauce.

- Kabocha no NimonoChunks of kabocha simmered skin side down in dashi with sugar, mirin, sake and soy sauce under a drop lid until just tender, then left to cool in the liquid so the sweet-salty seasoning soaks right in. Patches of skin are peeled away to let the flavour in and the edges are bevelled so each piece holds its shape, and the dense flesh turns soft, sweet and almost chestnut-like.
- ChawanmushiA savoury egg custard set so gently in dashi that it barely holds its shape, hiding a prawn, a piece of chicken and a shiitake. Silky, never bubbled.
- HambaguJuicy patties of beef and pork mince with softened onion and milk-soaked panko, seared then steamed until plump, and glazed in a quick sauce of ketchup, Worcestershire sauce, red wine and the pan juices. A favourite of Japanese home cooking.
