Ingredients
carnaroli rice320 g
chicken or vegetable stock1.2 l- saffron threads1 pinch
butter80 g
onions1
dry white wine100 ml
Parmesan80 g
salt
Instructions
- 01
Heat the . Steep the in a ladleful of it and keep the rest of the at a bare simmer beside you.
- 02
Finely grate the and chop the very finely. Melt a third of the and cook the over low heat for 8 minutes until translucent but not coloured.
- 03
Add the and toast it for 2 minutes, stirring, until the grains are hot and the edges turn glassy. This seals them so they stay separate.
- 04
Pour in the and stir until it has gone.
- 05
Add hot a ladle at a time, stirring often and waiting until each one is nearly absorbed before the next. Keep it at a lively simmer, not a boil.
- 06
After about 16 minutes add the with its steeping . Start tasting: the grain should be soft with a firm centre.
- 07
Take the pan off the heat, dice the remaining cold and add it with most of the grated and to taste, and beat hard for 1 minute. This is the mantecatura and it is what makes risotto creamy — not cream.
- 08
Rest for 1 minute, then serve spread flat on warm plates with the rest of the sprinkled over. It should ripple when you tap the plate.
Notes
- Cold butter beaten in off the heat emulsifies; melted butter stirred in just makes it greasy.
- Carnaroli holds its shape better than arborio. Either works, neither can be replaced by long-grain rice.
- Stock must be hot. Cold stock stops the cooking each time and gives you unevenly done grains.
