Ingredients

Servings:4
  • beef shin or chuck800 g
  • massaman curry paste4 tbsp
  • coconut milk800 ml
  • potatoes500 g
  • shallots6
  • roasted peanuts80 g
  • cinnamon sticks1

  • tamarind paste2 tbsp
  • coriander1 handful
  • jasmine rice (optional)300 g

Instructions

Cut the into 4 cm chunks. Peel the and cut them into large chunks, and peel and halve the .

  2. 02

Open the without shaking it and spoon the thick cream from the top into a wide pan. Heat until it splits and the oil rises — this is the base every Thai curry is built on.

  3. 03

Fry the in the split cream for 3 to 4 minutes until it smells fragrant and darkens.

  4. 04

Add the chunks of and turn them through the paste, then pour in the rest of the and add the , and .

  5. 05

Simmer very gently, partly covered, for 1½ to 2 hours, until the is starting to yield, adding a splash of water if the sauce gets too thick.

  6. 06

Add the chunks, the halved and the and cook 25 to 30 minutes more until everything is tender and the sauce has thickened.

  7. 07

Season with the , and , tasting as you go — massaman should land salty, sweet and sour all at once, with the sour slightly behind.

  8. 08

Roughly chop the and scatter it over. Serve with the , if using.

Notes

  • Do not shake the coconut milk tin. Splitting the thick cream is the technique the whole dish rests on.
  • Shin is better than a quick-cooking cut: it needs the time and gives the sauce body.
  • Balance at the end, not the beginning. Pastes vary a lot in salt and heat.
