Kartoffelsalat
By Groceree
Also known as German Potato Salad
The southern German potato salad: warm waxy potatoes sliced straight from the pan and soaked in hot beef stock sharpened with vinegar, mustard and onion. There is no mayonnaise in it at all; the creaminess comes from potato starch loosening into the dressing as it stands.

Ingredients
waxy potatoes1 kg
beef stock250 ml
onions1
white wine vinegar3 tbsp
medium mustard1 tbsp
sugar1 tsp
sunflower oil4 tbsp
salt4 tsp
black pepper
chives3 tbsp
Instructions
- 01
Boil the in their skins in water salted with 1 tbsp of the for 20 to 25 minutes, until a knife meets only slight resistance in the centre. Take them out a shade early rather than late; that have gone floury collapse into the dressing.
- 02
While the cook, finely chop the and bring the to the boil with it, the , the , the , the remaining and a good grind of , and simmer for 2 minutes so the loses its raw bite.
- 03
Drain the and let them steam dry for 2 minutes, then peel them while they are still too hot to hold comfortably, gripping each one in a tea towel.
- 04
Slice the warm about 5 mm thick straight into a wide bowl. Warm slices drink the dressing in; cold ones sit in it.
- 05
Bring the dressing back to the boil, pour it over the and turn them gently with a flat spoon. It will look far too wet at this point, which is right.
- 06
Leave to stand at room temperature for 30 minutes, turning once more halfway through. The liquid disappears into the slices and the salad turns creamy on its own.
- 07
Snip the . Fold through the and most of the , then taste and add a little more or if needed. Scatter the rest of the over. Serve warm or at room temperature, never straight from the fridge.
Notes
- Waxy potatoes only: Charlotte, Sieglinde, Nicola or similar. Floury varieties break up the moment the hot dressing hits them.
- North of the Main this name means a different salad altogether: cold boiled potatoes bound with mayonnaise, usually with gherkins, apple and hard-boiled egg folded in. It is made ahead and kept cold, where this one is dressed hot and eaten the same day.
- Vegetable stock works in place of beef and the salad is then vegetarian. For a heartier version, fry 100 g of diced smoked bacon until crisp and tip it in with its fat along with the oil.
